Soft-boiled eggs with pea soup

INGREDIENTS

  • - pea soup (recipe no. 7)
  • 4 eggs
  • 2 spoonfuls vinegar
  • to taste salt and pepper
  • to taste chives

Method

Step 1.Let’s begin with pouring half liter of water in a rather large pot.

Step 2.Bring to a boil, add salt and vinegar and reduce heat (boiling must be barely perceptible).

Step 3.Gently place the eggs in the boiling water

Step 4.Cook the eggs for 3-4 minutes and drain them with a perforated ladle over absorbent paper.

Step 5.At this point, heat the pea soup and pour a small amount over each plate, place one egg in the middle and sprinkle it with pepper and chopped chives.
