Mini pizzas

    • 4 slices rustic bread
    • 4 tablespoons tomato passata
    • 6medium-chopped anchovy fillets
    • 6-8 olives, pitted and chopped in half
    • 50 g mozzarella
    • A pinch of oregano
    • A pinch of salt
    • Oil

1. Spread the tomato passata over each slice of bread then evenly add the anchovies and olives.
3. Sprinkle each slice with the oregano and a pinch of salt, then drizzle with oil.
4.Cover with the diced mozzarella and place the pizzas in the microwave on the top shelf under the grill.
5.Cook using the grill function for 5-7 minutes until the mozzarella melts and begins to turn a light golden colour.
